Oven-Baked Stuffed Jalapenos topcook.tomathouse.com
Ingredients:
- 12 large jalapenos
- 60 g feta
- 110 g of cream cheese, room temperature
- 110 g of grated smoked Pepper Jack cheese, or another sharp cheese, such as extra-sharp cheddar
- A small handful of fresh cilantro, finely chopped
- 2 tbsp. l. grated onion
Preparation:
- Preheat oven to 220°C.
- Cut a third off each pepper pod lengthwise and shake out the seeds. Place the peppers on a baking sheet.
If the pepper doesn't lie flat on the baking sheet, cut a thin piece off the bottom of the pepper to prevent it from rolling.
- Combine feta, cream cheese, grated cheese, cilantro, and onion in a bowl and stuff the peppers with the mixture. Bake for 15-18 minutes, or until the peppers are tender and the cheese is crisp and bubbly around the edges.
