Beef and French Fries Stir-fry

Ingredients:

  • 450 g frozen French fries (about 5 cups)
  • 1 ribeye steak (450g), cut into thin strips
  • 2 tablespoons soy sauce
  • 3 cloves of garlic (1 grated, 2 thinly sliced)
  • 2 tablespoons of vegetable oil
  • 1 large onion, thinly sliced
  • Half a jalapeño, chopped (remove seeds to reduce heat)
  • 8 Campari or other tomatoes on the vine (about 280 g), cut into 4 pieces
  • 1 tbsp red wine vinegar
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh cilantro

Preparation:

  1. Bake the fries according to package directions. Meanwhile, combine the steak in a bowl with 1 tablespoon soy sauce, grated garlic, and a pinch of salt and black pepper; set aside for 10 minutes.
  2. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the steak in a single layer and cook, stirring once or twice, until browned but not cooked through, about 2 minutes. Transfer to a plate with a slotted spoon.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the red onion and jalapeño and cook, stirring, until the vegetables soften, about 3 minutes. Add the tomatoes and chopped garlic; cook until the tomatoes begin to burst, about 3 minutes.
  4. Return the steak and any juices to the pan along with the remaining 1 tablespoon of soy sauce and vinegar. Remove from heat, add the fries, parsley, and cilantro, and stir. Season with salt and pepper to taste.
