Cornbread Turkey Stuffing

Ingredients:

  • 4 tablespoons butter
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 2 tbsp. fresh corn kernels
  • 2 tablespoons of crushed garlic
  • 1 cup diced sweet red pepper
  • 220 g smoked ham, diced
  • 2 eggs
  • 3 cups chicken broth
  • 0.5 cups heavy cream
  • 2 tbsp chopped fresh coriander leaves
  • 2 tbsp chopped fresh parsley leaves
  • 8 cups toasted cornbread cubes

Preparation:

  1. Preheat oven to 190°C.
  2. Melt the butter in a frying pan and sauté the vegetables until softened. Add the ham and cook over low heat for another 2 minutes. Set aside to cool slightly. Mix the eggs, broth, cream, and herbs. Season with salt and pepper to taste.
  3. Combine all ingredients, including the cornbread, in a 4-quart lasagna dish and bake, covered with foil, for 30 minutes. Remove the foil and bake for an additional 20 minutes or until golden brown.
