Ingredients:
Crisp
- 900 gr. ripe Bere-Bosc pears (4 pcs.)
- 900 g of firm red apples (6 pcs.)
- 1 tsp. grated orange zest
- 1 tsp. grated lemon zest
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 0.5 cup granulated sugar
- 1/4 cup premium flour
- 1 teaspoon ground cinnamon
- 0.5 tsp ground nutmeg
Topping
- 1.5 cups premium flour
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 0.5 tsp coarse salt
- 1 cup oatmeal
- 220 g chilled unsalted butter, diced
Preparation:
- Preheat oven to 175°C.
- Peel and core the pears and apples and cut into large chunks. Place the fruit in a large bowl and add the zest, citrus juice, sugar, flour, cinnamon, and nutmeg. Place everything in a 22 x 30 x 5 cm oval baking dish.
- Topping:
In the bowl of a stand mixer fitted with a paddle attachment, combine the flour, sugar, salt, oats, and butter. Mix on low speed for 1 minute, until the mixture forms coarse crumbs. Sprinkle the topping evenly over the fruit, completely coating them.
- Place the crisp pan on a baking sheet and bake for 50 minutes to 1 hour, until the top is crisp and the fruit is bubbly.
- Serve the crisp warm.
