Watermelon and cucumber smoothie

Ingredients:

  • 1 piece of cucumber, 5 cm in size, peeled and coarsely chopped (about 0.5 cups) + 1 slice for garnish
  • 3 tbsp. low-fat yogurt or kefir
  • 1 tbsp honey, optional
  • Juice of half a lime (about 1 tbsp)
  • 2 cups diced seedless watermelon, frozen

Preparation:

  1. Combine the cucumber, sour milk, honey, if using, and lime juice in a blender. Blend at high speed until smooth.
  2. Add half of the frozen watermelon and blend until almost smooth, stopping the blender as needed and pressing down on the ingredients with a spatula or wooden spoon to aid in the blending process.
  3. Add the remaining frozen watermelon and continue blending until smooth. Add 1-2 tablespoons of water if needed to thin the smoothie. Pour into a glass and garnish with a cucumber slice.
