Ingredients:
- 3 cups premium flour
- 2 tablespoons vegan granulated sugar
- 2 tablespoons white vinegar
- Fine salt
- 1 cup unrefined coconut oil or olive oil
- 8-10 tbsp. ice water
Preparation:
- In the bowl of a food processor, combine the flour, sugar, vinegar, and 1/2 teaspoon salt; pulse until combined. Add the coconut oil a little at a time and pulse until the largest pieces are the size of peas. Add 8 tablespoons of ice water and pulse until evenly combined. Press down on a handful of dough; it should hold its shape. If the mixture is too crumbly, pulse in another 1-2 tablespoons of ice water.
- Divide the dough into two pieces, place on pieces of plastic wrap and shape each piece into a 22 cm disc, 1 cm thick. Refrigerate for at least 1 hour or overnight.
- To make rolling out the dough easier, let it soften slightly (it should feel slightly soft when pressed) at room temperature. This may take 20-40 minutes, depending on the temperature in your kitchen.
