Jiaozi - Chinese dumplings

Ingredients:

    Dumplings

  • Half a medium white cabbage, coarsely chopped
  • 0.5 tsp grated ginger
  • 1 large clove of garlic, finely chopped
  • 0.5 cup finely chopped green onions
  • 0.5 cup chopped allspice (optional)
  • 100 g of peeled and deveined shrimp, cut into pieces
  • 220 g of minced pork
  • 1/4 cup soy sauce
  • 0.5 tsp. dark sesame oil
  • 1 package of dumpling dough
  • 2 tablespoons of vegetable oil

    Dip sauce

  • 1/4 cup soy sauce
  • 3 tbsp. l. rice vinegar
  • 1 teaspoon thinly sliced ​​white part of green onions
  • 1 pinch of toasted sesame seeds

Preparation:

  1. To prepare the fillingPlace the cabbage in a food processor, add 0.5 teaspoon of salt, and chop finely (but not to a puree consistency). Wrap the chopped cabbage in a clean kitchen towel and squeeze out the excess water, then transfer to a large bowl. Add the ginger, garlic, green onions, and, if desired, chives. Add the shrimp and ground pork, 1/4 cup of soy sauce, sesame oil, salt, and black pepper to taste. Mix with your hands. Taste the filling after frying a small amount, and adjust the salt to taste.
  2. To make the dipping sauceIn a small bowl, combine soy sauce, rice vinegar, green onions and toasted sesame seeds.
  3. To make a dumpling with a wave in the middlePlace 1 tablespoon of filling in the center of a dumpling circle. Wet the edges of the dough with water, then fold them in half to form a taco shape. Begin by bringing the edges of the semicircles together to pinch them like a regular dumpling, but make a small 20-degree fold on one edge and seal the edges in one motion, pulling the dumpling shape slightly upward toward your thumbs. Continue folding the dumplings until all the filling is used.
  4. To fry dumplingsHeat vegetable oil in a large nonstick skillet over high heat. Arrange the dumplings in a single layer, making sure they're not touching. Add water until it reaches halfway up the dumplings, and cover the skillet with a lid. Reduce the heat to medium-high and cook until all the water has evaporated and the dumplings are golden brown on the bottom, about 10 minutes. Alternatively, you can steam the dumplings for about 5 minutes.
  5. Transfer the dumplings to a plate and serve with dipping sauce.
