Ingredients:
- 220 g dry penne pasta
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp. freshly squeezed lemon juice
- 0.5 tsp smoked paprika + extra for serving
- 1/4 tsp finely grated garlic
- 1 cup grated Manchego cheese
- 1 cup diced ham
- 1/4 cup chopped fresh parsley
- 1/4 cup canned roasted sweet peppers, drained and chopped
Preparation:
- In a large saucepan, bring salted water to a boil.
- In a large bowl, combine mayonnaise, sour cream, lemon juice, smoked paprika, garlic, 3/4 cup Manchego cheese, 1/2 teaspoon salt, and a few grinds of freshly ground black pepper.
- Add the pasta to boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; transfer to a bowl with the dressing.
- Add the ham, parsley, and red pepper to the bowl and toss. Season with salt and pepper to taste. Sprinkle with the remaining 1/4 cup Manchego cheese and smoked paprika. The pasta salad is best served immediately.
