Avocado and cucumber salad topcook.tomathouse.com
Ingredients:
Salad
- 2 unripe avocados
- 2 tablespoons torn fresh parsley leaves
- 1 mini cucumber, thinly sliced
- Half a small red onion, thinly sliced
Refueling
- 2 tablespoons extra-virgin olive oil
- 1 tbsp. honey
- 1/4 tsp ground cumin
- Juice of 1 lime (about 2 tbsp)
Preparation:
- Salad:
Peel the avocado, cut into 2-cm-thick pieces, and place in a large salad bowl. Set two pieces aside in a small bowl for the dressing. Add the parsley, cucumber, and onion to the avocado pieces in the large bowl. Season generously with salt and pepper.
- Refueling:
Mash the two reserved avocado slices with a fork until smooth. Add the olive oil, honey, cumin, and lime juice and mix until smooth.
Drizzle the dressing over the avocado salad and gently toss with your hands to distribute evenly. Serve immediately.
