Ingredients:
- 1 baguette, sliced into 1cm thick slices (about 30-36 slices)
- 1/4 cup olive oil
- 5 plum tomatoes, thinly sliced
- 600 g fresh mozzarella, thinly sliced
- 1 bunch fresh basil, leaves only
Preparation:
- Preheat oven to 230°C.
Place the sliced baguette on a baking sheet. Brush with a little olive oil and sprinkle with salt. Bake until the bread is pale golden brown and crispy, about 5 minutes. Remove from the oven.
- Top each slice of bread with a slice of tomato and sprinkle with salt and black pepper. Top each slice of tomato with a slice of mozzarella and season with salt. Return the baking sheet to the oven and bake until the cheese and tomato are heated through, about 5 minutes.
- Arrange the toasts on a serving platter. Place a basil leaf on top of each toast. Brush the basil with olive oil. Season with salt and black pepper and serve.
