Kid-Friendly: Ricotta, Blueberry, and Grape Toast topcook.tomathouse.com
Ingredients:
- 1/4 cup sliced almonds with skins
- 3/4 cup red seedless grapes, halved
- 0.5 cup blueberries
- 1 tbsp honey + extra to drizzle over when serving
- 1 teaspoon freshly squeezed lemon juice
- 0.5 cup ricotta
- 1 teaspoon lemon zest
- 2 tbsp unsalted butter, softened
- Half a baguette, cut into 15cm pieces, halved horizontally
Preparation:
- Preheat oven to 350°F (175°C). Place the almonds on a rimmed baking sheet and toast for 5 minutes; transfer to a small bowl and set aside. Evenly butter 4 baguette halves. Transfer to the baking sheet and toast until crisp, 5-7 minutes.
- In a medium bowl, combine the grapes, blueberries, honey, and lemon juice. In a small bowl, combine the ricotta and lemon zest.
- Sprinkle the toasted bread halves with a pinch of salt and a little black pepper and spread 2 tablespoons of the ricotta mixture on each. Place each half on a separate serving plate, drizzle with honey, top with 1/4 cup of the fruit mixture, and sprinkle with 1 tablespoon of toasted almonds. Serve drizzled with more honey.
