Ingredients:
Fondue
- 450 g grated Gruyere
- 1/4 tbsp. grated parmesan
- 2 cups clarified apple juice
- 2 tablespoons cornstarch
- 0.5 tsp. country Dijon mustard
For dipping
- 1 baguette, cut into 1cm pieces (about 8 cups)
- 2 crisp apples, cored and thinly sliced
- 2 tbsp. baked potato balls
- 2 cups broccoli florets
- 2 tbsp. boiled penne pasta
- 1 cup mixed grape and cherry tomatoes, halved
- 1 tbsp. pretzels or crackers
- 220 g salami, cut into 1 cm pieces.
- 0.5 cups of gherkins or pickled cucumbers
Preparation:
- In a medium saucepan, bring the apple juice to a boil over medium heat. In a medium bowl, combine the Gruyère cheese and cornstarch. Add the cheese handfuls at a time to the simmering juice, stirring constantly until smooth and allowing the sauce to simmer between additions, about 30 seconds.
- Remove the pan from the heat, add the Parmesan cheese, mustard, 1/2 teaspoon of salt, and a pinch of black pepper. Pour the sauce into a serving bowl and serve with any dipping appetizers (choose 3-4).
