Ingredients:
- 1.5 cups premium flour + extra for dusting the pan
- 1 teaspoon of baking soda
- 1 teaspoon fine salt
- 0.5 tsp baking powder
- 0.5 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 1 cup of sugar
- 0.5 cups vegetable oil
- 2 large eggs, beaten
- 2 tsp vanilla extract
- 2 ripe bananas, peeled and mashed with a fork (3/4 cup total banana puree)
- 1 cup (about 110 g) fresh blueberries
- Butter to grease the bread pan
Preparation:
- Position a rack on the middle shelf of the oven. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 5 x 3-inch loaf pan. Set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon, and nutmeg. In a large bowl, beat the sugar, oil, eggs, and vanilla extract until smooth. Stir in the bananas and blueberries. Add the dry ingredients and stir until evenly combined.
- Pour the batter into the prepared loaf pan. Bake until a tester inserted into the center comes out clean, about 1 hour. Cool for 15 minutes. Remove the banana bread from the pan and cool completely on a wire rack, about 2 hours.
