Chicken wings in orange glaze topcook.tomathouse.com
Ingredients:
- 12 whole chicken wings
- 1 can (170 g) frozen orange juice concentrate
- 3 tablespoons hoisin sauce
- 2 teaspoons of honey
- 1 tbsp soy sauce
- 1 tsp. rice vinegar
- 0.5 tsp crushed red pepper flakes
Preparation:
- Fill a 6-quart saucepan with 2 cm of water, place a foldable steamer on top, and set over high heat. Cover and bring to a boil.
- Trim the wing tips and discard or set aside for the broth. Using kitchen shears or a knife, cut the wings at the joints. Place them in a steamer, cover, reduce the heat to medium, and simmer for 10 minutes. Remove the wings from the steamer and pat dry thoroughly. Place the wings on a wire rack set on a baking sheet lined with paper towels and refrigerate for 1 hour.
- Preheat oven to 220°C.
- Replace paper towels with parchment paper. Bake the wings on the middle rack of the oven for 20 minutes. Flip and bake for another 20 minutes or until golden brown.
- Twenty minutes before the wings are done, combine the orange juice concentrate, hoisin sauce, honey, soy sauce, rice vinegar, and red pepper flakes in a small saucepan. Stir and bring to a boil over medium heat. Reduce the mixture to about 0.5 cups, about 5-10 minutes. Remove from heat and let cool for at least 5 minutes.
- Remove the wings from the oven, transfer them to a large bowl with the orange glaze, and toss to coat. Serve hot.
