Ingredients:
- 340 g of penne pasta
- 1/4 cup extra virgin olive oil
- 6 tomatoes, diced
- 3 tablespoons balsamic vinegar
- 3 cloves garlic, crushed
- Fresh basil, chopped
- Grated Parmesan
Preparation:
- Cook the penne pasta in a large pot of boiling salted water according to package directions. In a large bowl, combine the tomatoes, garlic, olive oil, and vinegar. Stir in the basil. Drain the pasta, transfer it to a bowl, and toss to coat with the tomato sauce. Serve sprinkled with Parmesan cheese.
