Chicken burger patties

Ingredients:

  • 450 g of minced white chicken meat
  • 2 cups fresh bread crumbs, divided
  • 0.5 tbsp. low-fat milk
  • 3 tbsp grated sweet onion (or very finely chopped)
  • 1/4 tsp cayenne pepper
  • 3/4 teaspoon coarse salt
  • Freshly ground black pepper
  • 1 teaspoon olive oil

Preparation:

  1. Be sure to use ground white chicken. If you buy ground chicken from a butcher, tell them so or ask them to grind the chicken breast for you. You can also make your own ground chicken by grinding the chicken breast in a food processor. Remove any excess fat, skin, bones, and cartilage, cut the fillets into 2-cm cubes, and process until coarsely ground.
  2. Use fresh bread crumbs in this recipe. They take just a few minutes to prepare. Remove the crusts from the bread (or leave them on), tear the bread into pieces, and pulse in a mini food processor. Make a large batch and freeze them so you have a fresh supply on hand next time.
  3. Place the ground chicken in a bowl. Using a silicone spatula, stir in the milk, 1/2 cup of bread crumbs, onion, cayenne pepper, salt, and black pepper to taste. The mixture will be very wet and difficult to form into patties, but don't stop. Spread the remaining 1/2 cup of bread crumbs on a plate or baking sheet.
  4. Divide the ground meat into 4-5 portions (depending on your preferred patty size) and form the patties by hand. Roll each patty in breadcrumbs. Heat olive oil in a large nonstick skillet over medium heat and fry the patties until golden brown, about 5 minutes per side. Serve immediately.
