Ingredients:
- 0.9 kg large red or yellow potatoes, peeled and cut into 1 cm pieces.
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- Half an onion, chopped
- 0.5 tsp paprika
- 1 clove of garlic
- 1/4 cup fresh parsley
Preparation:
- Bring a large saucepan of salted water to a boil. Add the potatoes, cover, and cook over medium-high heat until tender, about 6 minutes; drain.
- In a large cast-iron skillet, heat the butter and olive oil over medium heat; add the potatoes and spread them out in a single layer. Cook, undisturbed, until browned on the bottom, about 5 minutes. Add the onion and sprinkle with paprika, stir the potatoes, and cook for another 5 minutes. Stir once more, then continue cooking until the potatoes are golden brown, about 5 minutes more.
- Meanwhile, coarsely chop the garlic, sprinkle with parsley and 1 teaspoon of salt. Grind everything together. When the potatoes are done, add the garlic mixture to the pan and stir to distribute evenly; fry for about 2 more minutes. Season with salt and pepper to taste.
