Pineapple casserole

Ingredients:

  • 1 cup of sugar
  • 6 tbsp. premium flour
  • 2 cups grated sharp cheddar
  • 2 cans of 560g canned pineapple chunks, drain the liquid and set aside 6 tbsp.
  • 1 cup crushed crackers (recommended: Ritz)
  • 110g melted butter + extra for greasing the pan

Preparation:

  1. Preheat oven to 175°C.
  2. Grease a medium casserole with butter.
  3. In a large bowl, combine the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks and stir to distribute evenly. Pour the mixture into the prepared pan.
  4. In a medium bowl, combine crushed graham crackers, melted butter, and the reserved pineapple syrup. Stir with a rubber spatula. Spoon the graham cracker mixture over the pineapple mixture. Bake for 25-30 minutes or until golden brown.
