Ingredients:
- 2 tbsp. almond needles
- 1 cup unrefined coconut oil
- 1 - 2 tbsp. any low-carb sweetener (powder)
- 2 tsp sugar-free vanilla extract
- 1 teaspoon orange zest
- A small pinch of coarse salt
- 2 tablespoons cocoa powder
- Special equipment: 12-cup mini-muffin pan; 12 mini-muffin liners
Preparation:
- Line a 12-piece mini muffin pan with paper liners.
- In a food processor, process the almonds, coconut oil, sweetener, vanilla extract, orange zest, and salt until smooth. Transfer half of the mixture to a small bowl and stir in the cocoa powder.
- Fill half of one cavity with the vanilla mixture, then quickly fill the other half with the chocolate mixture. It should resemble black and white cookies. Repeat with the remaining vanilla and chocolate mixture. Tap the pan on the countertop a few times to release any air.
- Freeze until completely set, about 30 minutes. You can remove the candies from the mold if desired. Store in the refrigerator in an airtight container for up to 5 days..
