Ingredients:
Bottom layer
- 4 tbsp cashew or almond paste
Middle layer
- 1 pear, cored and sliced
- 2 teaspoons lemon juice
- 1 teaspoon cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp cardamom
Topping
- 0.5 cups oatmeal
- 1/4 cup unsweetened coconut flakes
- 2 tbsp chopped almonds
- 2 tbsp. l. chopped cashews
- 1 tbsp. honey
- 1 teaspoon cinnamon
Preparation:
- Bottom layer:
Place 1 tablespoon cashew or almond butter in the bottom of each of 4 glasses or molds and freeze for about 1 hour.
- Middle layer:
Preheat the oven to 190°C. Remove the shot glasses from the freezer. In a small bowl, combine the sliced pear with lemon juice, cinnamon, nutmeg, and cardamom. Divide the mixture evenly between the shot glasses.
- Topping:
Combine oats, coconut, almonds, cashews, honey, and cinnamon in a bowl. Spoon evenly over the pear mixture in each shot glass.
- Bake directly on the oven rack (or on a baking sheet) until slightly bubbly and beginning to darken, 20 to 25 minutes.
