Guinness Sunday

Preparation:

Combine 450 ml of Guinness or other stout with 0.5 cups of sugar in a saucepan and bring to a simmer over low heat. Cook until syrupy, about 40 minutes. Stir in 3 tablespoons of diced chilled butter. Drizzle the syrup over vanilla or pecan ice cream and serve with shortbread cookies.
