Ingredients:
Burgers
- 4 hamburger buns, cut in half horizontally
- 0.6 kg ground beef
- Half a small onion, cut into pieces
- 5 cloves garlic, crushed
- 0.5 cup fresh basil + 2 tablespoons thinly sliced leaves for serving
- 1/4 cup fresh parsley
- 3/4 tbsp. grated parmesan
- 1 cup tomato sauce + 1 cup warmed dipping sauce
- 1 teaspoon dried oregano
- 4 slices of mozzarella
- 1 tbsp. l. olive oil
Fried spaghetti
- Vegetable oil, for deep-frying
- 110 g spaghetti
- 1/4 tbsp. grated parmesan
Preparation:
- Fry the spaghetti.
Grease a baking sheet with vegetable oil. Heat 5-7 cm of vegetable oil in a Dutch oven until it reaches 180°C (350°F) on a deep-fry thermometer. Meanwhile, bring a medium saucepan of salted water to a boil. Add the pasta to the boiling water and cook according to the package directions, then drain. Spread the spaghetti in an even layer on the prepared baking sheet and let cool.
- Cut the cooked spaghetti into shorter pieces and fry in oil in batches, turning once, until golden brown, 30 seconds to 1 minute. Transfer to paper towels to drain, and sprinkle with Parmesan and salt.
- Prepare the burgers.
Preheat the oven to broil. In a food processor, puree the onion, 4 cloves garlic, 1/2 cup basil, and parsley. Transfer to a bowl and add the ground beef, 1/2 cup each of Parmesan cheese, tomato sauce, oregano, 1/2 teaspoon salt, and black pepper to taste. Mix with your hands, distributing all the ingredients evenly, and form into four patties, 2.5 cm thick. Place them on a rimmed baking sheet.
- Grill the patties, turning once, until golden brown and cooked through, 6-8 minutes. Top each patty with a slice of mozzarella and 2 tablespoons of the remaining tomato sauce. Return to the oven and grill until the cheese is melted, about 30 seconds.
- Place the buns cut-side up on another baking sheet and broil until golden brown, 1-2 minutes. Lightly brush the toasted sides with olive oil, rub with the remaining garlic clove, and sprinkle with the remaining 1/4 cup Parmesan cheese. Return to the oven and broil until the cheese is melted, about 30 seconds.
- Place a cheese patty on the bottom half of each bun, sprinkle with basil, and top with the other bun half. Serve with fried spaghetti and warm tomato sauce for dipping.
