Ingredients:
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 2 tsp apple pie seasoning
- 3 tablespoons unsalted butter, room temperature
- 3 Golden Delicious or Gala apples, peeled, cored and sliced into 0.5-1 cm thick rounds.
- 1 and 3/4 cups premium flour
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1.5 tsp of baking soda
- 1 teaspoon of salt
- 2 cups whole milk
- 3/4 cup whole milk Greek yogurt
- 2 large eggs
- 1.5 tsp vanilla extract
- 1 cup powdered sugar
- 5 tsp apple cider (unfiltered apple juice without sugar)
- 1/4 teaspoon apple pie spice
- Maple syrup and/or whipped cream, for serving
Preparation:
Bake the pancake: Preheat oven to 450°F (230°C). Combine granulated sugar, brown sugar, and pie spices in a large bowl. Grease a rimmed baking sheet with 2 tablespoons butter and arrange the apple slices in a single layer; sprinkle with 1/3 cup of the sugar mixture. Bake until the apples are soft and the baking sheet is mostly dry, 25 to 30 minutes.
- Meanwhile, stir both flours, baking powder, baking soda, and salt into the remaining sugar mixture. In a separate bowl, whisk together the milk, yogurt, eggs, and vanilla. Fold the milk mixture into the flour mixture.
- Pour the batter over the apples and gently spread to cover the fruit. Bake until the top is dry and a toothpick inserted into the center comes out clean, 12-15 minutes. Brush with the remaining 1 tablespoon of butter. Let cool for 15 minutes.
Prepare the glaze: In a bowl, combine powdered sugar, cider, and apple pie spice. Drizzle the glaze over the pancakes. Cut into square slices, arrange apple-side up on plates, and serve with maple syrup and/or whipped cream.
