Smoked shrimp with grilled tomato cocktail sauce topcook.tomathouse.com
Ingredients:
- 6 plum tomatoes or 4 oxheart tomatoes, halved
- Olive oil for greasing
- 1 teaspoon of honey
- 1 chipotle pepper in adobo sauce or 1 tablespoon chipotle hot sauce
- 3 heaping tablespoons of prepared horseradish
- A few drops of Worcestershire sauce
- Juice of half a lime
- 0.5 cup chopped fresh cilantro
- Large grilled shrimp, for serving
Preparation:
- Preheat the grill to high heat. Brush the tomatoes with olive oil and season with salt and black pepper. Grill until lightly charred and softened, turning halfway through, 4 to 6 minutes.
- Place the tomatoes, honey, chipotle pepper, horseradish, Worcestershire sauce, lime juice, cilantro, a pinch of salt and black pepper, and a drizzle of olive oil in a food processor and process until smooth. Serve with the fried shrimp.
Smoked shrimp To grill the shrimp, toss them with vegetable oil and season with salt and black pepper. Grill over medium-high heat until opaque and charred, 2-3 minutes per side.
