Salad with nectarines and sweet tomatoes

Preparation:

Slice 1 lb (450 g) of yellow oxheart tomatoes and nectarines into wedges. Sprinkle with 2 lb (60 g) of shaved ricotta salad and season with salt and pepper to taste. In a skillet over low heat, toast 2 tbsp. of pine nuts in 2 tbsp. of olive oil. Remove from heat, stir in 2 tsp. of white balsamic vinegar and drizzle over the salad.
