Ingredients:
- 3 cups diced pineapple
- 1 cup coconut water
- 1/4 cup coconut cream
Preparation:
- Combine the pineapple, coconut water, coconut cream, and a pinch of salt in a blender and blend until smooth. Strain through a fine-mesh sieve into an 8-inch (20 cm) square stainless steel or glass baking dish.
- Freeze until ice crystals begin to form around the edges, about 45 minutes. Using a fork, scrape the frozen portion toward the center of the pan. Continue freezing, scraping every 30 minutes, until completely frozen, about 4 hours.
