Chicken waffles with hot syrup topcook.tomathouse.com
Ingredients:
- 4 boneless, skinless chicken breasts (about 200g each)
- 1.5 tsp. brown sugar
- 1.5 tsp paprika
- 0.5 tsp ground coriander
- 0.5 tsp mustard powder
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cayenne pepper
- 2 tablespoons of vegetable oil
- 1/4 tbsp. maple syrup
- 5 teaspoons of apple cider vinegar
Preparation:
- Preheat the waffle iron to high. In a small bowl, combine the brown sugar, paprika, coriander, mustard powder, onion powder, garlic powder, cayenne pepper, 1.5 teaspoons salt, and 1/4 teaspoon black pepper. Set aside 1/4 teaspoon of the spice mixture for the syrup.
- Cut each chicken breast in half crosswise. Lightly pound the thicker pieces between two sheets of plastic wrap with the flat side of a meat mallet or a heavy skillet until they are the same thickness as the other pieces. Toss the chicken with vegetable oil, then rub the spice mixture all over.
- Generously grease a waffle iron with vegetable oil. Place a larger piece of chicken in the center of each back section of the round waffle iron and smaller pieces in the front sections. Press the lid down to flatten the chicken and cook, pressing the lid down occasionally, until the chicken is cooked through, 3-5 minutes. Transfer to a platter and repeat with the remaining chicken breasts.
- Meanwhile, in a small saucepan, combine the maple syrup, vinegar, and the reserved 1/2 teaspoon of spice mix and heat over high heat. Cook until the syrup thickens, about 5 minutes. Drizzle over the chicken waffles and serve.
