Ingredients:
Shish kebabs
- 1 kg boneless, skinless turkey breast, cut into 5 cm cubes.
- 1 tbsp vegetable oil + extra for greasing the grill
- 1 tsp. grated lemon zest
- 1 teaspoon paprika
- 12 slices of bacon
Refueling
- 1 cup mayonnaise
- 1/4 cup sour milk or kefir
- 2 tablespoons freshly squeezed lemon juice
- 2 tbsp chopped fresh parsley
- Halved French bread, lettuce, and halved grape tomatoes, for serving
Preparation:
Prepare the kebabs: Combine turkey, vegetable oil, lemon zest, paprika, and 1 teaspoon each salt and black pepper in a large bowl; toss to combine.
- Preheat the grill to medium heat. Thread the turkey pieces onto six 12-inch skewers. Wrap two slices of bacon around each skewer, overlapping slightly to cover the entire turkey.
- Brush the grill grate with vegetable oil. Grill the kebabs, turning frequently, until the turkey is cooked through and the bacon is crisp, about 25 minutes.
Meanwhile, prepare the dressing: In a small bowl, combine mayonnaise, sour milk, lemon juice and parsley; season with salt and pepper.
- Serve the kebabs on buns with lettuce and tomatoes; drizzle with the dressing.
Note If you are using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent them from burning.
