Carrot, Date, and Feta Salad

Ingredients:

  • 3 medium carrots
  • 2 tbsp coarsely chopped cilantro
  • 1.5 tbsp. l. olive oil
  • 2 teaspoons of honey
  • Juice of 1 lime
  • 1/4 cup crumbled feta
  • 2 tbsp chopped toasted almonds
  • 2 tbsp finely chopped dates

Preparation:

  1. Using a vegetable peeler or mandoline, slice the carrots into thin ribbons. Soak them in ice water until the ribbons are firm and curled, about 15 minutes. Drain and pat dry.
  2. Combine cilantro, olive oil, honey, 0.5 teaspoon salt, and lime juice in a bowl. Add the carrots along with the feta cheese, almonds, and dates and toss to distribute the ingredients evenly. Serve immediately or let the salad sit for a while before serving.
